Make time for the brassica family, in all its rich variety. School dinners and the lingering smell of overcooked cabbage have given these vegetables a bad name. Treat them right though, and you're looking at dishes that are as healthy as they're economical. Try a broccoli and spelt gratin or spicy cauliflower with apricots. Pickled cabbage, or sauerkraut, also gets a new lease of life in a imaginative variety of recipes. A vegetarian feast.
